Day 52





My take on a simple southern dish:

Grilled scallops with fresh mango salsa

Everything is based on how many people you are serving, but I was serving two with my amounts

six sea scallops
1 mango
6 baby tomatoes
1 handful of fresh cilantro
juice of 1/2 lime
1 tablespoon of olive oil
1/2 teaspoon of old bay seasoning
salt/pepper to taste

mixed greens 

season the scallops with the old bay seasoning and salt and pepper.  Set aside.  Dice the mango in a bowl with the tomatoes, add chopped cilantro, stir in lime juice, olive oil and season to taste.  Set aside.  Heat grill, ( as you know I have no cooking facilities, but I was able to make it in the toaster oven!!! ) and cook scallops until just opaque, about 3 minutes a side, depending on size.  While they are grilling place mixed greens in a bowl and toss with a simple vinaigrette :)  A completely simple yet elegant meal that you could easily serve to guests!  And you don't really need a functioning kitchen to make it..............thank goodness

Oh.....and a nice crusty french loaf wouldn't hurt either.....enjoy :)
