Not even this rainy weather can keep me from the BBQ!  Fortunately the porch now has a roof :) I want to share this recipe for these delicious ribs (because people often request it and it is delicious)  Oh, and really, really easy!  Embarrassingly so actually............ :(

Friday Night Ribs

Serves 6

Preheat oven to 275*

2 racks of baby back ribs
1 cup of finely diced onion
2 tablespoons of olive oil
1/2 teaspoon chipotle powder
1 cup tomato sauce
1 tablespoon of brown or raw sugar
1 cup of bottled chili sauce (I know, I know)
1 cup of bottle southwestern chipotle sauce (yes....as I said, embarrassingly easy)
salt and pepper

Rub both sides of ribs with salt and pepper, generously.  Wrap completely in foil and place on a cooking sheet in the oven for two hours.
Meanwhile, combine olive oil and onion in a small(ish) saucepan over medium heat and saute until translucent.
Add the rest of the ingredients in said order and stir on low until the sauce thickens nicely.
Add salt and pepper to taste (but remember they were already doused with both before the oven)
Remove ribs from foil and cut into one or two rib segments.  Brush with sauce and finish them up (when you have finished the cocktails and are ready to eat) on the BBQ for about twenty minutes or until they look like my picture....whichever comes first..........so easy and so yum .....
